HACCP critical limit
Critical limit - means in the HACCP system to define for each critical point the characteristics that can be monitored by monitoring the process progress. Each feature has its critical limits, which form the boundary between the allowable and the impermissible state at the critical point. Records must be kept of any exceedances.
CCP by HACCP
Critical Control Point (CCP) - a section of production (operation, step, procedure) in which there is the greatest risk of damage to the health of the product. The control of various types of danger applies. The CCP requires systematic monitoring of the course of processes, keeping records of hazard management, and remedial action in the event of an unmanaged condition.
